December 23, 2019

Easter is coming up this weekend people and we all know one the best ways to celebrate Easter (and every weekend!) is with brunch! Brunch is probably my favorite time of the week, and Easter weekend in D.C. is one of the best times to brunch in the capital.

There is one slight problem. Brunch is not too kind to my bank account and brunch over Easter weekend, is definitely not intern budget friendly. So what’s an intern to do?

Homemade brunch of course! Having a homemade brunch with your fellow interns is the perfect way to brunch on a budget. To help you guys out, I’ve rounded up 5 top Easter brunch recipes to suit every taste.

Last but definitely not least, why not try some filling avocado toast out for brunch? This Australian classic is taking the US by storm and I am not surprised! It’s a creamy, crunchy brunch that is quick to make and can be easily adapted to suit many different tastes. It is amazing on it’s own topped with just salt, pepper and olive oil, or you could go a step further and add a poached egg, some bacon or cheese (feta works particularly well!). Check out the best avocado toast recipe in town and alter it as you like.
